Orange Pound Cake Mini Loaves
















Oh how I love oranges! Sweet, tangy, and with all that vitamin C, this round, delicious fruit is the perfect pick me up to any day, and the sweetest secret addition to any baking recipe.

With the orange crop in full harvest here in Southern California, I thought it only right to create a mouth-watering dish infused with this favored fruit. And really, what better way to enjoy this amazing flavor than with some light, moist pound cake?

Using our USA Pan Mini Loaf Pans and our amazing Alta Artisan Flour, we've baked up some small, yet satisfying cake that is sure to be a hit not only in your home, but the perfect gift for any friends or neighbors. Get ready, it's time to bake up some Orange Pound Cake Mini Loaves!

Ingredients:
3 cups Honeyville Alta Artisan Flour
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Himalayan Salt
3 Tbsp Honeyville Buttermilk Powder + 1 cup Water
1/4 cup Orange Juice
2 tsp Vanilla
1 cup Butter, softened
2 cups Sugar
4 Eggs
1/4 cup Orange Zest

Glaze:
1/2 cup Orange Juice
1/2 cup Sugar

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine flour, baking powder, baking soda, and salt and whisk together.

In a small bowl, combine buttermilk powder, water, orange juice, and vanilla, and whisk lightly together until combined.

In a large bowl, cream butter, sugar, eggs, and orange zest together until ingredients are fully combined. Pour in dry ingredients and buttermilk/orange juice mixture and continue to blend until you get a smooth batter.

Pour batter evenly between your greased USA Pan Mini Loaf Pans. Place in 350 degree oven and bake for 30-35 minutes.

While cakes are baking, make your glaze by stirring orange juice and sugar together in a small pot. Bring to a boil over medium heat, continuing to stir, then reduce to a simmer for a few minutes. Remove from heat and let cool.

Once cakes are completely baked, remove and let cool on a wire rack. Drizzle glaze over the tops, let cool, then serve.
