Gluten-Free Strawberry Chocolate Cupcakes
















Love is in the air, wouldn't you agree? No, I'm not talking about the typical puppy love that seems to roll around this time of year. I'm talking about that love we all have for sweet, delicious, home-baked goodies!

One of those loves, at least for me, would have to be chocolate. I absolutely can't live without it! This cocoa infused concoction has always been a temptress that seems to pull me in, especially during this month of love!

It's that love for chocolate and sweets that has brought me to today's post. Not only does this have a chocolate element that can't be beat, it's completely gluten-free. That's right, absolutely no gluten in this muffin! You know you can't beat that.

With love in the air, it's time to bake up some Gluten-Free Strawberry Chocolate Cupcakes!

Ingredients:
1 package Grandpa's Kitchen Gluten-Free Yellow/White Cake Mix
1 1/2 tsp Vanilla
3/4 cup Butter, softened
5 Egg Whites
1/2 tsp Himalayan Salt
1/2 cup Honeyville Freeze Dried Strawberries, crushed
1 1/4 cup Milk
1/2 cup Sour Cream

Chocolate Frosting:
8 oz Cream Cheese, softened
1/2 cup Butter, softened
4 Tbsp Honeyville Baker's Cocoa Powder
2-3 cups Powdered Sugar

Directions:
Preheat oven to 350 degrees.

In a large bowl, beat together butter, eggs, vanilla, salt, and crushed freeze dried strawberries.

Add cake mix, milk, and sour cream, and beat together until a smooth batter forms.

In your USA Pan Muffin Pan, lined with muffin cups, pour batter evenly in each cup, 2/3 full.

Bake at 350 degrees for 18-20 minutes. Remove and let cool on a wire rack.

While cupcakes are cooling, make frosting by whisking together cream cheese, butter, baker's cocoa, and powdered sugar.

Place frosting in a decorating bag and pipe on top of cooled cupcakes. Cover tops with baking sprinkles for decoration.
