Oh homemade bread, is there anything you can't do? Whether it's warm, fluffy bread loaves, sweet, delicious cinnamon rolls, or buttery, mouth-watering dinner rolls, there isn't anything "basic" about homemade bread.
Today's recipe is the perfect example of that. Taking a page from the islands of the pacific, we've used our basic bread to give you a tropical twist you won't forget! With the flavors of sweet, delicious coconut, baked up on top of a warm, soft roll, this recipe is sure to be one your family will want at every meal. Get ready, we're baking up Samoan Coconut Rolls!
3 cups Hot Water
1/4 cup Butter, melted
1/3 cup Sugar
1 Tbsp Himalayan Salt
8-9 cups Honeyville Alta Artisan Bread Flour
3 Tbsp SAF Yeast
28 oz Coconut Milk
1 1/2 cups Sugar
Yields: 24-30 rolls
First, make your dough.
In your Bosch Universal Mixer or WonderMix Mixer, combine the following ingredients in this order: water, butter, sugar, salt, 4 cups flour, and yeast. Turn mixer on and, while ingredients are mixing, add remaining flour 1 cup at a time until dough begins to pull away from the sides. Knead in machine for 4-5 minutes.
Remove dough and place in a greased bowl, cover, and let rise for 30-40 minutes, or until double in size.
Once risen, punch down dough, remove from bowl, and begin to separate into rolls, about the size of tennis balls. Place rolls on your USA Pan Baking Sheet, lined with parchment paper. Let rise while oven preheats.
Preheat oven to 400 degrees.
In a large bowl, whisk together coconut milk and sugar until completely combined.
Cover the rolls generously with the topping.
Place in 400 degree oven, knock temperature down to 350 degrees, and bake for 20-25 minutes.
Remove and let cool before serving.
