No Bake Eggnog Bites
















Cookies, cakes, and snacks! It seems like that's what the Holiday season is all about these days. But with these delicious dishes comes the one thing most of us dread, but that takes up nearly all our Holiday time. That's right, I'm talking about Baking!

Think about it, in your quest to create the perfect desserts and Holiday treats, how much time is spent in the kitchen? How many events and traditions are passing us by because we're stuck in the kitchen, baking and baking and baking!

No more! It's time to create a mouth watering Holiday treat that requires no baking whatsoever. It's time to spend less time in the kitchen and more time with our family and friends! It's time for our No Bake Eggnog Bites!

Ingredients:
1 cup Honeyville Oat Groats
1/4 cup Honeyville Organic Coconut Flour
2 Tbsp Coconut Palm Sugar
Pinch of Himalayan Salt
Pinch of Cloves
1/4 cup Honeyville Organic Peanut Butter Powder + 4 Tbsp Water
1/4 cup Raw Honey
1/4 cup Eggnog

Directions:
First, grind your oat groats. To do so, place in your WonderMill Grain Mill and turn to "Pastry" setting. The result should be around 1 3/4 cup Oat Flour.

In a large bowl, combine oat flour, coconut flour, coconut sugar, salt, and cloves, and mix well.

In a microwave safe bowl, combine peanut butter powder, water, and honey. Place in microwave and cook for 30 seconds. Remove and stir until smooth.

Pour wet ingredients in with dry ingredients. Add eggnog and stir until a thick dough forms. Using your hands, pinch off small pieces of dough and roll into balls. Dust with sugar and place on a baking sheet. Place in refrigerator for 10 minutes to firm, then serve.
