Gluten-Free Lemon Meltaway Cookies
















Nothing beats a delicious cookie on a chilly Christmas Even night, am I right? Whether a family gathering, a goodie plate for the neighbors, or just a sweet treat while decorating the tree, this time of year is definitely the "cookie baking" season.

So imagine seeing all these delicious, mouth watering cookies everywhere you go, but you can't enjoy any of them. Imagine getting a plate of home-baked goodies, and having to toss them out because you can't have gluten.

This shouldn't be! We need a cookie that is not only gluten-free, but also delicious. We need a treat everyone can enjoy and love. This Holiday season, we need a cookie miracle! Ladies and gentlemen, I have that miracle. Made with our Grandpa's Kitchen Gluten-Free Flour Blend, we've created a cookie recipe that is sure to be enjoyed, not only this year, but for years to come! Prepare yourself, we're baking up some Gluten-Free Meltaway Cookies!

Ingredients:
1 1/2 cups Grandpa's Kitchen Gluten-Free Flour Blend
1/3 cup Ultra Gel
1/2 tsp Baking Powder
1/4 tsp Himalayan Salt
2/3 cup Powdered Sugar
Zest of 1 Lemon
12 Tbsp Butter, softened
1 Egg White
Juice from 1 Lemon

Glaze:
1 cup Powdered Sugar
Juice from 1 Lemon

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine flour, ultra gel, baking powder, salt, and powdered sugar, and whisk together.

Add lemon zest and mix until combined.

Create a well and add butter, egg white, and lemon juice, then mix until a thick dough forms (you may need to knead with your hands).

On your USA Pan Baking Sheet, lined with parchment paper, place heaping tablespoon sized rolled balls of dough.

Using a fork, gently press down on each ball.

Bake at 350 degrees for about 12 minutes, or just until the cookies are soft, but firm. Remove and let cool on baking sheet.

While cookies are cooling, make glaze by beating together powdered sugar and lemon juice. Once smooth, drizzle over the top of each baked cookie. Once glaze has solidified, serve and enjoy.
