Coconut Flour Pumpkin Muffins
















Don't you just love a warm muffin on a chilly Fall morning? I can still remember waking up early each October morning as a child and running into the kitchen to find fresh baked muffins just coming out of the oven. Oh the joy that would come with each mouth-watering bite!

Even though I'm a bit older, my craving for warm muffins in the Fall has not changed. And when it comes to warm muffins, is there anything better than a pumpkin flavored dish to get you in the crisp, Autumn mood?

So with a little help from our Organic Coconut Flour, and a craving for muffins that I just couldn't fight anymore, I've created a light, fluffy, and completely gluten-free muffin that is sure to brighten each morning you have this Autumn! Best of all, they're super easy to make! Grab your Fall apron, it's time to bake up some Coconut Flour Pumpkin Muffins!

Ingredients:
1/2 cup Pumpkin Puree
1/2 cup Raw Honey
1/3 cup Coconut Oil, melted
4 Eggs
1 1/2 tsp Vanilla
1/3 cup Honeyville Organic Coconut Flour
3/4 tsp Cinnamon
1/3 tsp Nutmeg
1/4 tsp Cloves
1/4 tsp Ginger
3/4 tsp Baking Soda
3/4 tsp Baking Powder
3/4 cup Mini Chocolate Chips

Directions:
Preheat oven to 350 degrees.

In a large bowl, mix together pumpkin puree, honey, coconut oil, eggs, and vanilla with an electric hand mixer, until smooth.

In a medium bowl, whisk together coconut flour, cinnamon, nutmeg, ground cloves, ginger, baking soda, and baking powder.

Add dry ingredients to wet ingredients and beat with an electric mixer until a thick batter forms. Fold in mini chocolate chips until fully combined.

In your USA Pan Muffin Pan, lined with muffin cups, pour batter evenly into each cup.

Bake at 350 degrees for 25-28 minutes. Remove and let cool 10 minutes in pan before serving.
