Raspberries. Is there anything not to love about them? Sweet, light, and oh so delicious, these little beauties are perfect in any jam, a bowl of cold milk and sugar, or straight off the bush!
For me, raspberries have always been a huge part of my life. Growing up in northern Utah, our backyard was full of big, ripe raspberry bushes. I can still remember those cool summer evenings, running around and playing tag as kids in the backyard, then gorging ourselves after each game with fresh raspberries, picked right off the vine. Now, each time I enjoy one, my mind is transformed back to those magical nights.
Today's recipe is my attempt to squeeze the last few days out of summer before fall officially hits. Using our always tasty Freeze Dried Raspberries, along with our impressive Alta Artisan Bread Flour, I've created a sweet, rich, and very delicious bread loaf that is sure to keep those summer nights alive in your home. Grab your apron, it's time for Raspberry Bread!
1 1/2 cups Honeyville Alta Artisan Flour
1 cup Sugar
2 tsp Baking Soda
1/2 tsp Himalayan Salt
1/2 tsp Vanilla
1 cup Greek Yogurt
1/2 cup Coconut Oil
Bake at 350 degrees.
In a large bowl, combine flour, sugar, baking soda, and salt, and whisk together.
Next, add eggs, vanilla, greek yogurt, and coconut oil, and beat together with an electric hand mixer until a soft batter forms.
Re-hydrate your raspberries by soaking in water until soft, then draining excess liquid.
Gently fold raspberries evenly into batter.
Pour batter in your greased USA Pan Small Loaf Pan, and spread evenly.
Bake at 350 degrees for 60-70 minutes. Remove and allow to cool on a wire rack before serving.
This bread bakes up soft, moist, and with the perfect sweetness that is sure to make your day brighter and your step lighter! The raspberries bake up with the perfect brightness and texture, and give that added flavor you're looking for in a bread like this. Serve it with melted butter on top, or drop a dollop of whipped cream on top to make it a delicious dessert. Either way, this is sure to keep you in the Summertime mood!
