No Bake. Are there any sweeter words during the hot summer months than these? With temperatures rising each day, the last thing any of us want to do is warm up the oven and, in turn, our kitchens, to bake up some tasty treats.
But in avoiding the heat do we have to completely avoid the treats? Do we have to sacrifice our delicious goodies in order to keep the temperatures cool? I tell you no! It's time to take back our summer snack time, and this is the perfect "no bake" recipe to do so!
With some help from our amazing Oat Flour, versatile Organic Peanut Butter Powder, and delicious Freeze Dried Raspberries, we've created a delicious, mouth watering cookie that requires no baking whatsoever. That's right, no warming up the oven, kitchen, or anything that involves a heat coil! Grab your mixing spoons, it's time to make some No Bake White Chocolate Raspberry Cookies!
3 1/2 cups Honeyville Oat Flour
2 Tbsp Sugar
1/2 tsp Salt
1/2 cup Honeyville Organic Powdered Peanut Butter + 3 Tbsp Water
3/4 cup Raw Honey
1/2 cup Almond Milk
1/2 cup White Chocolate Chips
Yields: 1 dozen cookies
First, take your USA Pan Cookie Sheet, line it with parchment paper, and place it to the side.
In a large bowl, combine your oat flour, sugar, and salt, and whisk together.
In a medium, microwave safe bowl, combine reconstituted peanut butter powder and honey. Microwave until warm, and mix together until ingredients are fully combined and smooth.
Add peanut butter/honey mixture and almond milk to dry ingredients and mix together until a thick cookie dough forms.
Fold in white chocolate chips and raspberries.
Using your hands, form small balls and press down to make cookie shapes, then place on your cookie sheet.
Using a fork, press down twice on the cookies to give the criss-cross pattern. Refrigerate for 30-60 minutes to allow cookies to set up, then serve.
Not only are these cookies extremely simple and easy to make, they taste absolutely amazing! The white chocolate, combined with the freeze dried raspberries, gives this cookie the perfect balance of flavor. The powdered peanut butter adds texture and strength to the cookie without completely overpowering the treat with peanut flavor. Serve these up as the perfect summertime snack and watch then fly off of the plate!
