Coconut Flour Chocolate Donuts
















Quick, name a delicious dish that is portable, easy to make, is enjoyed by everyone you know, and can serve as a snack, dessert, or breakfast! If you guessed donuts, then you, like us, know just how amazing these round cakes can be!

Yes, no matter what time of day, or even what time of year, donuts are always the perfect pick-me-up for any stressful day or situation. They make life a little better and any event just a little sweeter!

So what if I told you that you could have all the deliciousness of a light, fluffy, chocolately donut, baked into an amazing, gluten-free dish? Seems to good to be true? Not so! Thanks to our amazing Coconut Flour, Coconut Sugar, Coconut Oil, and a little help from our Flax Seeds, you can have a mouth watering, gluten-free donut the whole family can enjoy! Grab an apron, it's time for Coconut Flour Chocolate Donuts!

Ingredients:
1/4 cup Coconut Flour
1/4 cup Ground Flax Seed (or Flax Seed Meal)
1/4 cup Cacao Powder (you could also use our Baker's Cocoa Powder)
1/4 tsp Baking Soda
1/4 tsp Salt
1/2 cup Coconut Sugar
5 Eggs
1/2 cup Coconut Oil, melted

Chocolate Glaze:
1/4 cup Coconut Oil, melted
1/4 cup Coconut Sugar
2 Tbsp Cacao Powder (you could also use our Baker's Cocoa Powder)
1/2 tsp Peppermint Extract

Yields: 6 donuts

Directions:
Preheat oven 350 degrees.

In a medium bowl, combine coconut flour, ground flax seed, cacao powder, baking soda, salt, and coconut sugar, and whisk together.

In a separate bowl, combine eggs and coconut oil and whisk together until combined.

Pour egg mixture into dry ingredients and mix until a soft batter forms.

Spray your Norpro Donut Pan with cooking spray and spread batter evenly into each donut cup.

Bake at 350 degrees for 20 minutes or until donuts spring back after touch. Turn out on to a wire rack to cool.

While donuts are cooling, make your glaze by whisking coconut oil, coconut sugar, cacao powder, and peppermint extract together with an electric hand mixer. Drizzle over the top of the donuts, let cool completely, then serve.
