What is it about peach cobbler and summertime that we love so much. Think about it, whenever you think of delicious peach cobbler, you almost always think of warm summer nights, camping trips, and backyard barbecues. It's as if this amazing dish has become the unofficial dessert of summertime fun!
So how do you take such a well known, traditional dish, and make it better? How do you improve on something that is so amazing already? Easy, you simplify the ingredients, making it easy to make, then you throw it all in a cast iron skillet and bake it right up. Why? Because everything tastes better baked in cast iron, am I right?
Today's recipe for peach cobbler couldn't be simpler. Not only does it call for our delicious, mouth watering Freeze Dried Peaches, but every ingredient in the dish is measured in two's. You could say this cobbler is double the taste, double the fun! Grab your skillet, it's time to bake up some Cast Iron Peach Cobbler!
2 cups Honeyville Freeze Dried Peaches + 1/4 cup Water
2 sticks Butter, melted (1 cup)
2 cups Sugar
2 cups Honeyville Alta Artisan Flour
2 tsp Baking Powder
2 cups Milk
Preheat oven to 350 degrees.
In a medium bowl, re-hydrate your peaches, using the water.
Pour peaches into your cast iron skillet, then pour melted butter over the top.
In a large bowl, combine sugar, flour, and baking powder, and whisk together. Add milk and mix until batter forms.
Add batter to skillet.
Bake skillet at 350 degrees for 35-40 minutes. Remove and allow to cool before slicing and serving.
This cobbler bakes up warm, delicious, and with a sponge-like texture. The taste is completely out of this work with a flavor you'll melt for with each bite. Serve this up as the perfect summertime dessert for any occasion and top with a scoop of vanilla ice cream to turn up the taste!
