Blueberry Cornbread Muffins
















Nothing beats warm corn bread, am I right? Whether sliced up next to a delicious bowl of soup, or slathered with some honey butter at a family picnic, cornbread captures that sweet, savory flavor that we all love and enjoy.

No matter where I am or what I'm doing, I'm always drawn in to a new recipe or new twist on this delicious American classic! So when I came across this amazing recipe that combined mouth watering blueberries with sweet cornbread, I knew I had to try it.

Using our amazing Freeze Dried Blueberries, and with a little help from our Yellow Corn Meal, Buttermilk Powder, and some Pure Maple Syrup, we've come up with the perfect Southern side dish sure to make your lips smack and your stomach growl in excitement! Grab your apron, it's time to bake up some Blueberry Cornbread Muffins!

Ingredients:
1 1/2 cups Honeyville Yellow Cornmeal
1/2 cup Honeyville Alta Artisan Flour
1 Tbsp Baking Powder
1/2 cup Sugar
1/2 tsp Salt
2 1/2 Tbsp Honeyville Buttermilk Powder + 1 cup Water
2 Eggs
1/4 cup Butter, melted
1/3 cup Pure Maple Syrup
1 cup Honeyville Freeze Dried Blueberries

Yields: 12 muffins

Directions:
Preheat oven to 400 degrees.

In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt, and whisk together.

In a separate bowl, combine buttermilk powder, water, eggs, butter, and maple syrup, and whisk together until fully combined.

Pour wet ingredients into dry ingredients and mix until a thin batter forms. Gently fold blueberries into batter until combined.

In your USA Pan Muffin Pan, pour batter evenly into each muffin cup. You can fill each cup to the top with batter.

Bake at 400 degrees for 20 minutes. Let cool on wire rack before serving.
