Raspberry Filled Cupcakes
















What makes a baked treat or dessert even better? You know, that special little something that transforms your typical, basic snack into something completely out of this world. That secret surprise that makes your mouth water and your taste buds dance with delight. Perhaps that special little something can best be described in one word: Filling!

Think about it, how exciting is it to take a bite out of a delicious, chocolate covered doughnut, only to find a sweet, creme filling inside? Or how about that tasty little candy that seems so sweet and innocent on the outside, and then, BAM, an explosion of flavor, texture, and filling you weren't expecting!

Today's recipe, in and of itself, is a dessert classic that could stand the test of time. But, with the little addition of a delicious fruit filling, this traditional dish gives your taste buds an exciting surprise they weren't expecting. Get ready, it's time to bake up some Raspberry Filled Cupcakes!

Ingredients:
3 cups Honeyville Yellow White Cake Mix
1/3 cup Butter, melted
3 Eggs
1 1/4 cup Water
1/4 cup Greek Yogurt

Raspberry Filling:
3 cups Honeyville Freeze Dried Raspberries
1/2 cup Water
1/4 cup Sugar
2-3 Tbsp Ultra Gel

Cream Cheese Frosting:
8 oz Cream Cheese, softened
1/2 cup Butter, softened
1 tsp Vanilla
3 cups Powdered Sugar

Directions:
Preheat oven to 350 degrees.

In a large bowl, beat together cake mix, butter, eggs, water, and yogurt, until a smooth, thin batter forms.

In a medium bowl, add raspberries and water and let soak until raspberries are soft. Mash raspberries using a fork or pastry whisk.

Add sugar and ultra gel, and stir until mixture is thick.

In your USA Pan Muffin Pan, lined with cupcake liners, pour batter into each cup, about 1/4 full. Next, add a spoonful of raspberry filling.

Finally, pour remaining batter over the top of the filling, covering it completely.

Bake at 350 degrees for 22-24 minutes, or until cupcakes are springy, but baked all the way through. Remove and allow to cool on a wire rack.

While cupcakes are cooling, make frosting by combining cream cheese, butter, vanilla, and powdered sugar together and whisking together until a soft frosting forms.

Using a pastry bag, pipe frosting over the top of each cupcake, then serve.
