Pineapple Lime Energy Bites
















What's the one thing you need most this time of year? If you're like me and find yourself running from activity to activity each day, the one thing you could use more of, especially now, is energy.

But how do we get that energy? How can we have a healthy, delicious energy boost that will last all day and leave us feeling satisfied, but not over indulged? How do we get everything we need, without overloading with everything we don't!

That was the question we had when we set out to create these mouth-watering energy bites. When it comes to snacks, we all want a quick energy boost that can last all day, without all the extra fat, sugar, and carbohydrates. Thanks to our amazing Almond Flour and Coconut Flour, we've come up with a simple, no-bake recipe that gives you everything you need in an energy bite, without any extra, unwanted ingredients. Get ready, it's time for Pineapple Lime Energy Bites!

Ingredients:
1/2 cup Honeyville Blanched Almond Flour
1/2 cup Honeyville Organic Coconut Flour
1/2 cup Honeyville Freeze Dried Pineapple
1 1/2 cups Pitted Dates
Zest and Juice of 3 Limes
2 Tbsp Raw Honey
1/2 cup Unsweetened Coconut

Yields: 6-8 bites.

Directions:
First and foremost, you'll need a good Food Processor. Luckily for you, our BOSCH Food Processor Attachment is as good as they come!

In your Food Processor, combined almond flour, coconut flour, and pineapple, and blend until pineapple is broken up into small pieces.

Next, add dates, lime zest, lime juice, and honey, and blend until a very thick paste begins to form.

Roll the paste into small, ping-pong sized balls, spritz with some water, then roll in your unsweetened coconut.

Place on a USA Pan Cookie Sheet, lined with parchment paper. Place in refrigerator and let chill for at least 30 minutes before serving.
