Glazed Doughnut Muffins
















Do you ever get that craving you know can't be tamed? That want and pull for a sweet, delectable dessert that always seems to be your weakness. No matter how strict you are or how committed you've become to your diet, there's always that one dish, snack, or treat that always seems to pull you in. Mine is, and always has been, doughnuts!

What's not to love about doughnuts?! Sweet, moist, and packed full of the perfect blend of nutmeg, cinnamon, and sugar, these baked (and sometimes fried) circles of goodness always seem to lure us in. No matter how difficult a day is going or how stressful a situation may be, it's always made just a little bit better with a warm doughnut.

But what if you could add to that flavor, aroma, texture, and overall presentation? What if you could "rethink" the way we view doughnuts? That's exactly what we've done today! Using our extremely versatile and simply amazing Alta Artisan Flour, we've come up with the perfect, transforming recipe that we know your family is absolutely going to love! Get ready, it's time to bake up some Glazed Doughnut Muffins!

Ingredients:
1/4 cup Butter, softened
1/4 cup Coconut Oil, melted
1/2 cup Sugar
1/3 cup Brown Sugar
2 Eggs (or 4 Tbsp Honeyville Ova Easy Eggs + 6 Tbsp Water)
1 1/2 tsp Baking Powder
1/4 tsp Baking Soda
3/4 tsp Nutmeg
1 tsp Cinnamon
3/4 tsp Salt
1 tsp Vanilla
2 2/3 cups Honeyville Alta Artisan Bread Flour
1 cup Milk

Glaze:
3 Tbsp Butter, melted
1 cup Powdered Sugar
1 tsp Vanilla
2 Tbsp Hot Water

Directions:
Preheat oven to 425 degrees.

In a large bowl using your electric hand mixer, beat together butter, coconut oil, sugar, and brown sugar until smooth. Next, add eggs or egg powder, and beat until fully incorporated. After that, add baking powder, baking soda, nutmeg, cinnamon, salt, and vanilla, and beat until fully combined.

Add flour and milk and mix together until a soft, thick batter forms.

In your USA Pan Muffin Pan, lined with muffin cups, pour batter into each cup. Fill completely to the top.

Bake at 425 degrees for 15 minutes. Remove and allow to cool for 5-6 minutes in the muffin pan, then let cool on a wire rack for 10-15 additional minutes.

While muffins are cooling, make glaze by whisking together all ingredients in a medium bowl. Once muffins are cool, dip the tops in the glaze, gently rolling around to ensure the glaze gets evenly across the entire muffin.

Place back on wire rack and allow glaze to cool and harden before enjoying.
