Coconut Flour Orange Poppy Seed Muffins

Healthy or tasty? Which do you prefer at breakfast time? Do you find yourself drawn to a sweet, delicious pastry, donut, or kids cereal, or are you driven and focused towards something healthy, filling, and energy filled?

For most of us, what we have at breakfast time greatly affects the things we do for the rest of the day. Yet, we all seem to find ourselves in a constant food battle of what we know we should eat, and what we want to eat.

What if I said you can have both healthy and tasty? No, I don't mean increasing the size of your breakfast dish. I'm talking about having a healthy, delicious breakfast meal that satisfies your sweet tooth and leaves you feeling good inside. Oh, did I also mention it's completely grain-free? Trust us, these aren't the healthy muffins your mom used to make! Get ready for our Coconut Flour Orange Poppy Seed Muffins!

Mill your flax seed in a small mill or coffee grinder and place it in a large bowl (should give you about 1/2 cup flax seed meal). Add coconut flour, tapioca starch, baking soda, cream of tartar, poppy seeds, and salt, and whisk together until full combined.

wet-ingredients

In a separate bowl, combine eggs, honey, coconut oil, and orange juice, and whisk together until full combined.
