Almond Flour Pancake Bites
















Is there anything better than warm pancakes? No matter where you are, what you're doing, or the condition the weather is in, nothing is tastier than warm, fluffy pancakes for breakfast. Drizzled with maple syrup and butter, and served up hot and fresh, we all seem to have a weakness for these saucer-shaped delicacies!

With life as hectic as it is, it can be hard to find time to sit down for a delicious, hearty breakfast. Even, dare I say, for pancakes. With work, family, and so many other things demanding our time, it's hard, if not impossible, to make time for a healthy, filling breakfast meal.

Ladies and Gentlemen, this can't be so! We can have both delicious and healthy. We can have both light, and hearty. We can have both homemade, and quick. How, you ask? Simple. Almond Flour Pancake Bites!

Using our versatile Blanched Almond Flour, and a few other key ingredients, we've come up with the perfect, gluten-free, hand-held breakfast bites that are sure to fill you up and leave your soul satisfied. Grab your apron, it's time to whip up a batch!

Ingredients:
1 cup Honeyville Blanched Almond Flour
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
2 Tbsp Coconut Palm Sugar
1 tsp Cinnamon
1/2 cup Coconut Milk
2 Eggs
3 Tbsp Coconut Oil, melted

Yields: 6 Pancake Bites

Directions:
Preheat oven to 350 degrees.

In a large bowl, whisk together almond flour, baking powder, baking soda, coconut sugar, and cinnamon.

Next, add coconut milk, eggs, and coconut oil, and whisk together until a thick, smooth batter forms.

Spray your USA Pan Muffin Pan with nonstick spray, then, using a 1/4 cup measuring cup, pour batter into each muffin cup.

Bake in over at 350 degrees for 10-12 minutes. Remove from cups and allow to cool on a wire rack before serving.
