Quinoa Spice Bread
















Quinoa. A South American whole grain dating all the way back to the Inca Empire, this unique, pearled food has caught fire in the health food industry in the last few years. No matter where you look in the grocery store, restaurant menus, or favorite cooking channel, you'll find quinoa being baked, cooked, boiled, and overall infused into every dish and recipe. Yes, it's not hard to see that quinoa has taken over.

And why not? I mean, look at how amazing this whole grain is! Not only is it super flavorful and extremely versatile, the health benefits associated with quinoa are simply amazing. Packed full of fiber (more than most grains), protein, amino acids, and completely gluten-free, it's no wonder people all around the country are finding ways to sneak quinoa into every meal.

Here at Honeyville, we've officially joined the quinoa craze! Using our impressive BOSCH Universal Mixer, and with a combination of some of the most aromatic and flavorful spices, we've created a loaf of bread that will make your mouth water, your taste buds dance, and your senses overload with excitement. And best of all, it's baked up with our Organic Quinoa! Grab your apron, we're baking up some Quinoa Spice Bread!

Ingredients:
3 cups Hot Water
1/4 cup Butter, melted
1/2 cup Raw Honey
1 Egg
1 Tbsp Salt
2 tsp Cardamom
1 tsp Cinnamon
1 tsp Ground Cloves
1/2 tsp Black Pepper
1/2 tsp Ground Ginger
1 1/2 tsp Fennel Seed
1 1/2 cups Honeyville Hard White Wheat, milled (about 3 cups flour)
1 cup Honeyville Hard Red Wheat, milled (about 2 cups flour)
1 cup Honeyville Organic Quinoa
3 Tbsp SAF Yeast
4 cups Honeyville Alta Artisan Bread Flour

Directions:
First, mix your spices.

In a small bowl, whisk together cardamom, cinnamon, ground cloves, black pepper, ground ginger, and fennel seed, then set aside.

In your BOSCH Universal Mixer, add the following ingredients in this order: water, butter, honey, egg, salt, spice mixture, milled hard white wheat, milled hard red wheat, quinoa, and yeast. Turn mixer to #2 setting and, while mixing, add alta artisan flour until dough begins to pull away from sides. Knead in machine for 3-4 minutes.

Remove dough from machine and place in a greased bowl, cover, and let rise for 1 hour.

Once dough is risen to double in size, punch down and place on a hard surface.

Preheat oven to 450 degrees.

Divide dough in half. You can wrap one half and refrigerate it for use another day, or place it in a bread pan and bake it separate.

Take one half of your dough, shape it into a ball, and place it in a 4 quart Dutch Oven that you've greased with butter.

Place lid on and bake in oven at 450 degrees for 30 minutes. After 30 minutes, remove lid, then bake an additional 5 minutes, or until top is brown.

Remove and allow to cool for 5-10 minutes before removing from Dutch Oven. Let cool on a wire rack for an additional 15-20 minutes before slicing and serving.

All I use is fresh ground flour. How can I substitute the artisan flour? Thank you

Just substitute it directly for the Alta. The bread may not rise as high, but it will still taste delicious. Great question!
