Peach Pound Cake
















Peaches and Summer. Are there any sweeter words in the English language? Just the mere discussion of delicious, ripe peaches and hot summer days gets me in the mood for pool parties, patriotic parades, and neighborhood block gatherings.

Yes, there's no better combination than fresh peaches and summer days. That's why, with summer just around the corner, I knew I had to whip up the perfect dish to get us all in that "peachy" summer mood! What better way than a delicious pound cake? Made with our amazing Freeze Dried Peaches, this is the ideal dessert for any summertime gathering you may have planned. Grab a mixing spoon and call the neighbors over, it's time to bake up some Peach Pound Cake!

Ingredients:
1/2 cup Butter, softened
1/2 cup Sugar
1/3 cup Brown Sugar
2 Eggs
1 tsp Vanilla
1 1/2 cups Honeyville Alta Artisan Flour
1/2 tsp Baking Powder
1/4 tsp Salt
1 cup Honeyville Freeze Dried Peaches

Frosting:
8 oz Cream Cheese
2 cups Powdered Sugar
2 Tbsp Water

Directions:
Preheat oven to 325 degrees.

In a large bowl, beat together butter, sugar, and brown sugar until light and fluffy. Add eggs and vanilla and beat together until fully combined.

In a separate bowl, whisk together flour, baking powder and salt.

Next, re-hydrate peaches by soaking in water until soft, then draining any excess liquid.

Add dry ingredients to wet ingredients and mix until a thick batter forms. Fold peaches into batter, then pour batter into your USA Pan Small Loaf Pan.

Bake at 325 degrees for 55-60 minutes. Remove and allow to cool in pan for 10 minutes, then turn out on a wire rack.

While cake is cooling, make your frosting my mixing cream cheese, powdered sugar, and water together with an electric hand mixer. Using a large spatula, spread frosting on top of cake, then slice and serve.
