oats-in-food-processor

Place your oats in your BOSCH Food Processor Attachment and pulse until oats are a coarse meal.

re-hydrating-bananas

In a small bowl, re-hydrate your bananas by soaking in water until soft, then draining any excess liquid. Once soft, mash bananas with a fork until smooth.

cookie-ingredients

In a large bowl, combine oats, bananas, flax seed meal, cinnamon, and salt, and mix together until a thick dough forms.

unbaked-cookie

Using your hands, take pieces of dough and roll into ping pong shaped balls, then place on your USA Pan Cookie Sheet covered with parchment paper. Press down balls when on sheet and, using your finger, create a well in the middle. Place a tsp of jam in each well.

Bake at 350 degrees for 10-12 minutes. Remove and allow to cool on a cooling rack.

Once cookies are cooled, reconstitute powdered peanut butter by adding 1/4-1/3 cup of water and mixing together. Place in a piping bag and pipe on top of cooled cookies, then serve.

These cookies are the perfect blend of texture and flavor. The oats and bananas hold everything together and, with the cinnamon, give the perfect amount of taste. The jam and peanut butter toppings also add the ideal amount of sweetness without completely overpowering the cookie. Best of all, these make up and bake up literally in minutes! That means you can have them any time a cookie craving hits.

Do you have a suggestion for a substitute for the peanut butter powder? I would like to make these nut-free.

Hi Margaret! Since the Powdered Peanut Butter is just the latticed topping, you can really substitute any type of nut butter, frosting, or anything else for this. Let us know which you decide and how it tastes!
