Almond Flour Italian Lemon Cake
















What makes the perfect summertime dessert? Is it the time it takes to prepare it? The delicious ingredients only found, or only enjoyed during these hot summer months? Is it the dishes ability to be served at any picnic or gathering? What is it exactly that makes us love specific dishes during this warm weather season?

For me, a traditional summer dessert has to have one specific flavor -- Lemon! It just isn't a summer gathering without some sort of lemon flavored dish being served. That's probably what led me to today's delicious, ideal summertime recipe.

This lemon cake has everything you love in a traditional warm weather dish. Light, moist, delicious, and packed full of lemon goodness that simply can't be beat. Perhaps it's what it's not packed with that makes it even more appealing. Made with our impressive Blanched Almond Flour, this cake is completely gluten-free! That means everyone can enjoy a little slice of lemon heaven! Grab a mixing spoon, it's time to create some Almond Flour Italian Lemon Cake!

Ingredients:
1 cup White Chocolate Chips
2 Tbsp Heavy Cream
3/4 cup (1 1/2 sticks) Butter, softened
1 cup of Sugar, or Coconut Sugar (either works perfect)
Zest of 2 Lemons
Juice of 2 Lemons
4 Eggs, separated
1 1/3 cup Honeyville Blanched Almond Flour
Powdered Sugar for top

Directions:
Preheat oven to 350 degrees.

In a microwave safe bowl, combine white chocolate chips and heavy cream and microwave in 20 second intervals, stopping and stirring chocolate, until chocolate is completely melted. Set to side.

In a large bowl with your electric hand mixer, beat butter and sugar together until light and fluffy.

Add lemon zest, lemon juice, and egg yolks to butter/sugar mixture and beat together. Add almond flour and white chocolate to mixture and beat until completely combined.

Next, beat remaining egg whites until soft peaks form. Gently fold egg whites into batter until completely combined.

Pour cake batter into your greased USA Pan Round Cake Pan.

Place in 350 degree oven and bake for 40-45 minutes. Remove and allow to cool completely before removing from pan. Dust with powdered sugar before serving.
