Hazelnut Flour Cookie Sandwiches
















Do you love cookies? When I say love, I'm talking about that late night craving, stomach growling, nothing will appease me but crisp, homemade cookies love. The kind of love that makes you jump for joy every time you pass the cookie aisle at the grocery store, or every time you see a new cookie recipe pop up on your Pinterest page.

If your cookie love borders on obsession, then we have the perfect recipe for you, with just one little catch. These light, fluffy cookies are rich with flavor, full of texture, and exactly what you need to calm any cookie craving that might come along. The catch, you ask? These cookies are completely gluten-free! That's right, thanks to our amazing Hazelnut Flour and Fine Rice Flour, we've concocted the perfect cookie sandwich recipe that hits all your taste-testing requirements, while still meeting the needs of those that may be gluten intolerant. Get ready, it's time to bake up some Hazelnut Flour Cookie Sandwiches!

Directions:
2 cups Honeyville Hazelnut Flour
1 cup Honeyville Fine Rice Flour
3 Eggs
4 Tbsp Water
1/2 cup Butter, softened
1/2 cup Organic Coconut Sugar

Chocolate Frosting:
1/2 cup Honeyville Baker's Cocoa Powder
3 oz Cream Cheese, softened
1/2 cup Butter, softened
5 Tbsp Milk
1 tsp Vanilla
2 cups Powdered Sugar

Yields: 6 sandwich cookies

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine hazelnut flour, rice flour, eggs, water, butter, and coconut sugar together, and mix until a thick but sticky cookie dough forms.

On your USA Pan Cookie Pan, lined with parchment paper, place spoonfuls of dough, then press down to form a cookie shape.

Bake at 350 degrees for 15-18 minutes, or until cookies are soft, yet firm. Remove and allow to cool while you make your frosting.

In a large bowl, combine baker's cocoa, cream cheese, butter, milk, vanilla, and powdered sugar, and mix together with an electric hand mixer until a soft frosting forms.

Once cookies are cooled, frost the bottom of one cookie and place the bottom of the other cookie on top, forming a cookie sandwich. Place in refrigerator and allow to set up for 15 minutes before serving.
