Coconut Lemon Chia Seed Cookies
















Energy. It's something we all need. No matter if you're stuck at an office all day, chasing little ones around the house every morning, or rushing in the car to school, the grocery store, and back again, energy is something we could all use a little bit more of.

When it comes to adding more energy in our day, we're all looking for that quick fix. You know, that easy snack, drink, or pill that will give us the boost we need at the exact time we need it. To get the needed energy we're looking for, we have to go back to a healthy, whole grain source. We need the chia seed!

Today's recipe has everything you're looking for in a delicious, energy-boosting snack. Gluten-Free, heart healthy, and, of course, loaded with Chia Seeds, these cookies will give you the boost your body needs, but that your heart can handle! Get ready, it's time to make Coconut Lemon Chia Seed Cookies!

Ingredients:
3/4 tsp Baking Powder
1/2 tsp Xanthan Gum
1/4 tsp Salt
1 1/2 Tbsp Coconut Oil
5 Eggs
1 tsp Vanilla
3 Tbsp Lemon Juice
1/4 cup Raw Honey
2 Tbsp Sugar

Yields: 12 cookies

Directions:
Preheat oven to 325 degrees.

In a large bowl, combine coconut flour, baking powder, xanthan gum, salt, and chia seeds, and whisk together.

In a separate bowl, combine coconut oil, eggs, vanilla, lemon juice, honey, and sugar, and whisk until fully combined.

Pour wet ingredients into dry ingredients and mix until a thick cookie dough forms. Let the dough rest for 10 minutes.

On your USA Pan Cookie Sheet lined with parchment paper, scoop out and drop a Tbsp of dough on each spot, then form into a cookie shape.

Bake at 325 degrees form 12-14 minutes, remove, and allow to cool before enjoying.
