Quinoa Snickerdoodle Energy Bites

Packed full of our healthy organic Quinoa and with a taste and texture that will make your mouth water, this no-bake treat will give you the perfect, natural energy boost, without that terrible sugar overload that so many drinks and snacks have. Trust us, you'll feel good with each bite! Get ready, it's time for Quinoa Snickerdoodle Energy Bites!

Ingredients:
1 cup Honeyville Organic Quinoa
1 cup Dates, pitted
1 cup Cashews
2 Tbsp Coconut Oil
1 Tbsp Honeyville Powdered Peanut Butter
1 tsp Water
1 Tbsp Cinnamon
2-3 Tbsp Water

Directions:
First, prepare your quinoa.

Rinse quinoa thoroughly through a fine strainer. This will help remove that earthy taste and film that typically accompanies quinoa.

Spread quinoa on your USA Pan Cookie Sheet and dry in the oven at 300 degrees for 5 minutes. If quinoa begins to toast, that's okay. It just gives you added flavor! Once dry, remove from oven.

Dates-and-cashews











Place dates and cashews in your BOSCH Food Processor Attachment.

Process until they resemble a very coarse sand.

Next, add coconut oil, peanut butter powder, 1 tsp water, and cinnamon, and process until a dough forms.

Add quinoa and 2-3 Tbsp of Water and pulse.

You'll know your dough is ready when it's sticky.

Form 1" balls with your hands and place on a parchment lined USA Pan Cookie Sheet. Place in freezer for 1 hour, for balls to set up, before serving.

Uncooked quinoa?

Yes, you do not cook the quinoa in this recipe. If anything, you can slightly toast it in the oven when it's drying after your rinse it. Good question!
