Vinegar. It always seems to get a bad rap. Think about it, whenever people try to describe a terrible tasting meal or smell, they always compare it to vinegar. Or when describing a person who is feisty and out of control, we always say "They're full of vinegar."
Why such a bad label? Why so much anger towards an ingredient that, when used properly, adds a lot of flavor to any dish? Isn't it time we redeem this widely used baking ingredient? Isn't it time we break down the stereotypes and show, really show, what vinegar can do?
Ladies and Gentlemen, we have the recipe to do this! Combining four of our favorite whole grains, Barley, Millet, Rye, and Hard White Wheat, and throwing in a little Apple Cider Vinegar, we've concocted a tangy, delicious bread recipe that not only leaves your taste buds craving more, but will make you re-think your entire outlook on vinegar. Get ready, it's time for 4-Grain Vinegar Bread!
3 cups Hot Water
2 Tbsp Apple Cider Vinegar
2 tsp Salt
1/2 cup Raw Honey
1/2 cup Honeyville Pearled Barley, milled
1/2 cup Honeyville Hulled Millet, milled
1 cup Honeyville Whole Grain Rye, milled
1 cup Honeyville Hard White Wheat, Milled
2 Tbsp SAF Yeast
2-4 cups Honeyville Alta Artisan Bread Flour
Yields: 2-3 bread loafs
First mill your grains. Using your Komo Mill or Nutrimill, grind grains into a fine flour. With the 4 grains combined, you should come out with around 7 cups of whole grain flour.
Next, combine all ingredients in your BOSCH Universal Mixer, in the following order: water, vinegar, salt, honey, milled whole grain flour, yeast. Turn mixer to #2 setting and while ingredients are mixing, slowly add alta artisan flour, 1 cup at a time, until the dough begins to pull away from the sides. Once this happens, knead in machine for 3-4 minutes.
Remove dough, place in a greased bowl, cover, and let rise until double in size (about 35-40 minutes).
Punch down loafs, divide and place in your Norpro 12x4 1/2 Bread Pan and let rise for an additional 20 minutes.
While dough is rising, preheat oven to 400 degrees.
Once risen, brush tops with melted butter and sprinkle about 1/3 cup Honeyville Regular Rolled Oats on top. Place in 400 degree oven, knock temperature down to 350 degrees, then bake for 35 minutes.
Once baked, remove and allow to cool on wire rack before serving.
This bread bakes up so flavorful and delicious, you'll wonder why you never tried it before! The taste from the 4 different grains, combined with the tang of the apple cider vinegar, give this bread a mouth-watering flavor that you simply have to experience for yourself.
