Whole Grain Fruit Salad
















It's a new year, and that means only one thing: New Year's Resolutions. For many of us, our first and foremost resolution, each year, is to adopt a healthier lifestyle. Most of that involves eating healthier. If you're like me, though, that healthier lifestyle never makes it past the first week.

Why is it that we start the year off with such high hopes, only to lose those hopes so soon into our adventure? Perhaps it's because finding those foods that are both tasty and healthy for us can be such a challenge.

Not any more. We've got the perfect, all-healthy meal to keep your resolutions alive! Not only is this meal fortified with vitamins, minerals, and extremely healthy for you, it's also extremely tasty. Trust us, this is a meal your mouth with water for each time you make it!

Combining four delicious, heart healthy whole grains, cooking them up in the pressure cooker, then serving them with some of our favorite Freeze Dried Fruits, we've created the perfect meal you can enjoy for breakfast, lunch, or dinner. And did I mention it's extremely healthy? Get your palates ready, it's time to make some Whole Grain Fruit Salad!

Ingredients:
1/2 cup Honeyville Organic Quinoa
1/2 cup Honeyville Pearled Barley
1 cup Honeyville Whole Oat Groats
1 cup Honeyville Whole Grain Rye
1/2 cup Honeyville Freeze Dried Blueberries
1/2 cup Honeyville Freeze Dried Strawberries
1/2 cup Honeyville Freeze Dried Apricots
1/2 cup Honeyville Freeze Dried Apples

Dressing:
1/2 cup Olive Oil
1/2 cup Raw Honey
2/3 cup Balsamic Vinegar
1 tsp Cinnamon
1/4 tsp Nutmeg
1 Tbsp Ginger

Directions:
First, prepare your grains.

Cooked-Quinoa-Barley











Start with your Quinoa and Barley. In your Fagor Pressure Cooker, add quinoa, barley, and 2 1/2 cups water, then cook on "High Pressure" for 5 minutes. Once done cooking, release pressure, drain any excess liquid, and pour cooked grain in a large bowl.

Cooked-Rye-Oat-Groats











Next, cook your oat groats and rye. In that same Pressure Cooker, add oat groats and rye with 4 cups water, then cook on "High Pressure" for 14 minutes. Release pressure once finished cooking, drain, and add to cooked quinoa and barley.

Fruit-Added











Add your blueberries, strawberries, apricots, and apples.

Dressing











In a separate bowl, whisk together olive oil, honey, balsamic vinegar, cinnamon, nutmeg, and ginger, until a smooth dressing forms.

Finished-Salad











Drizzle about half the dressing on top (store the rest in a sealed container in the refrigerator for salads!), toss, and serve!
