Take these delicious energy balls, for example. Made with our hearty Regular Rolled Oats and held together with our amazing coconut oil, these balls are the perfect snack or treat to give you boost in your everyday grind. And who wouldn't want to visit a tropical paradise every now and then? Grab a spoon, it's time to create some Lemon Coconut Energy Balls!
6 Tbsp Coconut Oil
3 Tbsp Pure Maple Syrup, or Agave Nectar
1 Lemon, zested
1 Lemon, juiced
3/4 cup Honeyville Regular Rolled Oats
3/4 cup Shredded Coconut
Yields: 6 balls
First, mix your liquids.
In a medium bowl, combine coconut oil, maple syrup, lemon zest, and lemon juice.
Add oats and shredded coconut and stir until well combined.
Using your hands, roll ingredients into 6 1-2" balls, then place on cookie sheet lined with wax paper. Let chill in refrigerator for 20 minutes, to set up, before serving.
These energy balls are packed full of all the tropical flavor you come to expect in coconut and lemon. The combination of coconut oil, pure maple syrup, and rolled oats, give you a delicious, sweet tasting treat, without all the sugar!
