Gluten-Free Banana Pineapple Bread
















I love banana bread, don't you? That warm, amazing aroma that follows every fresh baked loaf right out of the oven. The rich, moist taste that combines both bread and cake into one delicious, banana-infused loaf. Slathered with melted butter or just served plain, very few things compare to everything we love about this tasty treat.

So how can you add to something so special as banana bread? How can you turn up the flavor and give this traditional treat a twist everyone will love? Pineapple, that's how! Using our Freeze Dried Pineapple, we've created a mouth-watering tropical masterpiece, sure to leave you satisfied and searching for more. And to make it even more unique, we've baked the whole thing up using our Grandpa's Kitchen Gluten-Free Flour Blend. Gluten-Free Banana Pineapple Bread? Yeah, we just went there! Grab your apron, it's time to bake!

Ingredients:
3 cups Grandpa's Kitchen Gluten-Free Flour Blend
1 tsp Salt
1/2 tsp Baking Powder
1 tsp Baking Soda
3 tsp Cinnamon
2 cups Sugar
3 Eggs
1 cup Honeyville Freeze Dried Bananas
3 tsp Vanilla
1 cup Honeyville Freeze Dried Pineapple
1/2 cup Halved Pecans

Yields: 2 loaves

Directions:
Preheat oven to 325 degrees.

Dry-Ingredients











In a large bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and sugar.

Re-hydrated-bananas











Next, re-hydrate your bananas by soaking them in water until they are soft, then draining the excess liquid.

wet-ingredients











Add eggs and vanilla to bananas and whisk together until fully combined and bananas start to break down.

Batter-with-pineapple











Add wet ingredients to dry ingredients and mix until a thick batter forms. Re-hydrate pineapples the same way you did the bananas, then fold in to the batter.

Batter-with-pecans











Gently fold in pecan halves.

Pour batter evenly between two USA Pan Small loaf Pans. Bake at 325 degrees for 1 hour, then remove and allow to cool on wire rack before serving.
