Chocolate Chip Apricot Cookies
















Apricots in winter? Most of us typically don't associate such a sweet, delicious fruit with such a chilly season. I mean, Apricots are all about springtime, new life, and everything green, right?

Why can't we bring that amazing, warm, spring/summer feel into these chilly months? Why can't we associate this flavorful fruit with cold weather as well as warm? Why can't we bring a little springtime to our homes this time of the year?

No more waiting until April or May for Apricots! Now, you can have this sweet season right at home. How, you ask? With our awesome Freeze Dried Apricots! These delicious bad boys, picked at the peak of freshness, then freeze dried to preserve that flavor and taste, can be enjoyed any time of the year. To prove that, I've created the perfect winter-time recipe with a little apricot twist on it! These cookies are sure to melt your winter blues away and get you ready for all things Spring! Grab your apron, it's time to bake up some Chocolate Chip Apricot Cookies!

Ingredients:
1/2 cup Butter, softened
1/2 cup Shortening
3/4 cup Brown Sugar
1/2 cup Sugar
2 Eggs
2 Tbsp Light Corn Syrup
1 Tbsp Vanilla
2 3/4 cup Honeyville Alta Artisan Flour
1 tsp Baking Soda
3/4 tsp Salt
1 cup Chocolate Chips
1 cup Honeyville Freeze Dried Apricots

Yields: 24 cookies

Directions:
First, prepare your dough.

Whipped-butter-and-sugar











In a large bowl, creamy together butter and shortening. Add sugars, eggs, corn syrup, and vanilla, and beat until light and fluffy.

Flour











In a separate bowl, whisk together flour, baking soda, and salt.

Chocolate-chips-and-apricots











Add flour to butter/sugar mix and stir until a thick dough forms. Gently fold in chocolate chips and Apricots.

Chilled-dough











Cover, place in refrigerator and chill for at least 2 hours.

Once time is up, remove and preheat oven to 350 degrees.

Take about 1 Tbsp of dough, roll into a ball, and place on your USA Pan cookie sheet, lined with parchment paper. Repeat for all cookies.

Baked-Cookie











Bake at 350 degrees for 10-12 minutes, or until lightly brown. Cool on pan for 10 minutes before serving.

Apricot-Cookies











These cookies bake up super light, fluffy, and full of flavor and texture. The apricots give the cookie the perfect amount of sweet flavor and chewiness that you can't find anywhere else.
