Peppermint Cream Brownies
















Is there any flavor more associated with a Holiday than Peppermint is with Christmas? Think about how many treats, desserts, and recipes you've seen in the past week that have peppermint in it. It's awesome! That rich, candy-cane flavor and texture infused into our favorite dishes seem to make our Holidays a bit brighter, don't you think?

With December officially here and the Holidays in full swing, we wanted to give you the perfect, easy-to-bake treat to get you in the festive mood. And, of course, that treat had to be infused with peppermint! So, without further adieu, I give you Peppermint Cream Brownies!

Ingredients:
1 box Honeyville Fudge Brownie Mix
2 Eggs
1/3 cup Vegetable Oil
1/4 cup Water

Peppermint Cream Topping:
1/2 cup Shortening
1/2 tsp Vanilla
1 tsp Sugar
3 1/2 cups Powdered Sugar
3 Tbsp Hot Water
5 Candy Canes, Crushed
2 cups Chocolate Chips

Directions:
Preheat oven to 350 degrees.

Batter-in-Pan











In a large bowl, combine brownie mix, eggs, oil, and water, and mix until a thick batter forms. Pour batter into your USA 8" Square Pan and bake at 350 degrees for 30 minutes.

Baked-Brownies











Remove and allow to cool for at least 1 hour.

Crushed-Candy-Canes











While brownies are cooling, make your cream filling by first crushing your candy canes. To do this, place candy canes in a large, resealable bag and, using a rolling pin, crush canes into small pieces.

Cream











Place crushed pieces, shortening, vanilla, sugar, powdered sugar, and water in a large bowl and, using an electric hand mixer, mix ingredients together until a soft cream forms.

Cream-Topping











Spread cream over the top of the cooled brownies.

Chocolate-Topping











Next, melt your chocolate chips and drizzle over the top of the cream.

Allow chocolate to cool and set up (about an hour) before slicing and serving.

Brownie

I think these could be baked up in foil baking cups and served as individual treats on a buffet for a fabulous presentation.
