Panettone Bread
















Raise your hand if you've heard of Panettone Bread! This sweet, delicious Holiday treat, also known as Italian Christmas Bread, is a favorite of many people all around the world. It's also a super fun dish to bake up. Why, you ask? Because the whole thing is baked in a can!

You've already seen us bake an amazing bread loaf in a #10 can, and Chef Tess has created an impressive Sweet New Zealand Bread in a can, but when it comes to baking bread in a #10 can, the pinnacle has and always will be Panettone Bread. Stuffed with delicious pine nuts, freeze dried apricots, and sweet, tart cherries, it's easy to see why this loaf is a new Holiday favorite in the Honeyville kitchen. We guarantee it will be one in your home as well. Grab an empty #10 can, it's time to bake up some Panettone Bread!

Ingredients:
1/2 cup Golden Raisins
1/2 cup Tart Cherries
1 cup Orange Juice
1 1/2 cups Hot Water
1 1/2 cups Warm Milk
2 Eggs
1 Egg Yolk
1/2 cup Butter, melted
1/2 cup Sugar
1 Tbsp Salt
3 Tbsp SAF Yeast
1 cup Pine Nuts

Yields: 2 loafs

Directions:
First, soak your fruit.

Fruit-Mix











To do this, combine apricots, raisins, and cherries in a bowl and pour orange juice over the top. Let your fruit soak for 15-20 minutes, then drain excess liquid.

In your BOSCH Universal Mixer, combine the following ingredients in this order: water, milk, eggs, egg yolk, butter, sugar, salt, 4 cups flour, and yeast. Turn mixer to #2 setting and add remaining flour 1 cup at a time until dough pulls away from the sides of the bowl, Once dough begins to pull away, add fruit and pine nuts and knead in machine for 3-4 minutes.

Remove dough, place in a greased bowl, cover, and allow to rise for 30-40 minutes.

One risen, punch down and remove.

Preheat oven to 400 degrees.

Divide dough in half.

Shaped-Dough











Shape each dough into a small ball.

Taking an empty, rinsed out, and greased #10 can, place dough ball in can.

Risen-in-Can











Allow to rise for 30-40 minutes.

Place in 400 degree preheated oven, knock temperature down to 375 degrees, and bake for 30-35 minutes.

Remove and allow to cool, in can, on a wire rack for 15-20 minutes. While bread is cooling, brush top with melted butter and sprinkle on sugar. Once cooled, remove from can, slice and serve.
