Gingerbread Lattice Cookies
















Gingerbread cookies and the Holidays. Since the beginning of baking, there hasn't been two things more tied together than these. Those rich, dark cookies fill the air with amazing spices each time we bake them. Gingerbread cookies are so much a part of this festive season that you can't think of one without the other.

Yes, it truly is Gingerbread season, and because of that, we knew that we had to come up with an exciting Gingerbread cookie recipe. This couldn't be the typical Gingerbread men or Gingerbread house. No, no, we wanted to create a unique, fun, exciting recipe that you and your family would love for years to come. And, of course, it had to be delicious!

Today's post is just that treat! Taking a traditional Gingerbread cookie recipe, we've put a little Honeyville twist on it that's sure to stand out for years to come. Grab your apron, we're making Gingerbread Lattice Cookies!

Ingredients:
1/2 cup Butter, softened
1/2 cup Brown Sugar
1/4 cup Molasses
1 Egg
1 Egg White
1 tsp Vanilla
2 1/4 cup Honeyville Alta Artisan Flour
1 1/2 tsp Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Ground Cloves
1/4 tsp Baking Soda
1/2 tsp Salt

Yields: 6-8 cookies

Directions:
In a large bowl, using an electric hand mixer, cream together butter, sugar, and molasses until light and fluffy. Add egg, egg white, and vanilla, and mix until full combined.

In a separate bowl, whisk together flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt. Add dry ingredients to wet ingredients and mix until a thick dough forms. Wrap the dough in plastic wrap and place in the refrigerator to chill for at least 2 hours.

Preheat oven to 350 degrees.

Rolled-Out











Take dough out of refrigerator and roll out on a floured surface.

Cut-into-Strips











Using a pizza cutter, slice the dough into thin strips.

Lattice











Taking half the strips, weave them between the other strips to create the lattice effect.

Once lattice is created, take a round cookie cutter or mason jar lid, and cut out individual cookies.

Cookie-on-Sheet











Place cut cookies on your USA Pan Cookie Sheet, lined with parchment paper.

Baked-Cookie











Bake at 350 degrees for 10 minutes. Remove, and allow to cool for 2-3 minutes before serving.

Gingerbread-Cookies











These cookies are a huge twist on a Holiday classic! The rich taste and aroma of delicious Gingerbread cookies rings through the whole cookie. The cookies bake up light and fluffy and are perfect with a tall glass of cold milk. Serve these up at your Holiday party, or leave a plate out for the big man in the red suit. Trust us, he'll love them!
