Muffins, muffins, and more muffins! When it comes to a delicious snack, breakfast, or dessert, you really can't beat a homemade muffin. That sweet taste, combined with your favorite ingredients is just perfect. If given the chance, I think I might eat muffins all day everyday.
But, as with most baked treats, we typically associate muffins with flour. What if I told you this didn't have to be the case? What if I told you that by combining two simple ingredients, you can have the most moist, delicious, and flour-less muffin you could imagine! Sounds too good to be true? Not so!
Using our very own Freeze Dried Bananas, combined with our Powdered Peanut Butter, we've created the perfect, gluten-free muffin without using a single cup of flour! Best of all, it tastes absolutely amazing! Prepare your palate, it's time to bake up some Flourless Peanut Butter Chocolate Chip Muffins!
3/4 cup Honeyville Powdered Peanut Butter + 3 Tbsp Water
1 cup Honeyville Freeze Dried Bananas
3 Tbsp Raw Honey
1 Tbsp Vanilla
1/4 tsp Baking Soda
1/2 cup Chocolate Chips
Yields: 6 muffins
Preheat oven to 400 degrees.
First, reconstitute your peanut butter by combining powder with water and stirring until creamy peanut butter appears.
Next, re-hydrate your bananas by soaking in water until soft, then draining any excess liquid.
Add bananas, egg, honey, vanilla, and baking soda to peanut butter and mix until a smooth, running batter forms.
Add chocolate chips and mix until just combined.
Using a spoon, scoop out batter into greased muffin tins. Fill each cup about 3/4 full.
Bake at 400 degrees for 8-10 minutes, or until tops are springy to touch. Remove and allow to cool 10 minutes in pan, in order to set up. Once cooled, remove and serve.
