Pumpkin Spice Popcorn Cobs

Popcorn and Fall. Is there any better combination? Whether it's a bag of caramel popcorn, kettle corn, or sweet, delicious popcorn balls, nothing gets us more in the spooky, autumn mood than this light and fluffy snack.

Today's recipe is the perfect treat to get you in that harvest mood! Not only does it have everything you've come to love in sweet, sticky, mouth watering popcorn balls, it also has all the look, creativity, and overall ambiance we've come to love with autumn decorating! Trust us, these are the perfect combinations of party snack and decoration you've been looking for.

Yellow-Popcorn











We used our amazing Yellow Popcorn to bake up this awesome, hand-held snack, and couldn't be happier with the results! Grab a can for yourself, and some cinnamon and pumpkin pie spice, because it's time to make some Pumpkin Spice Popcorn Cobs!

Ingredients:
1/2 cup Honeyville Yellow Popcorn
1/4 cup Butter
1 1/2 tsp Pumpkin Pie Spice
1 tsp Cinnamon
1 bag (16 oz) Marshmallows

Directions:
First, pop your popcorn.

Using an air popper, pop 1/2 cup of yellow popcorn.

Be sure to remove all the un-popped kernels, as you don't want to bight down on one of those rocks as you're enjoying your corn!

In a large saucepan, melt butter over medium heat. Once butter is melted, add your marshmallows and stir until completely melted.

Add cinnamon and pumpkin spice to marshmallows and stir until completely combined.

Pour mixture over popcorn and stir with a large wooden spoon until the mixture and corn is completely combined. I added some Autumn sprinkles to my mixture. As they melted with the warm marshmallow's, they gave the corn a cool blend of fall-time colors.

Lightly spray hands with cooking spray and begin to shape your corn cobs. Make sure to do this while the corn is still warm, but not hot enough to burn your hands. Place each cob on a cookie sheet lined with parchment paper.

Take another 9x12 sheet of parchment paper and fold it accordion style.

Cut the top of the sheet in a triangle shape, then unfold.

Taking your corn cob, roll up in the sheet until completely covered. Twist the bottom of the sheet closed, then lightly fold down the sides of the sheets. Repeat for each cob.

Just like that, you've got popcorn on the cob! You could also use colored tissue paper to give more variety.

Place on a serving plate, and enjoy!
