Vegan Berry Cheesecake Bites














Who doesn't love cheesecake, am I right? That delicious, creamy texture. Those amazing fruit toppings. Just one slice and you're in dessert heaven!

Yes, I think we can all agree, there's nothing better! But does that mean this treat is only exclusive to those able to eat dairy products? Wouldn't it be nice to have all the taste and texture we love in traditional cheesecake, but in a dairy free option? I know, I know, the very title "Cheesecake" implies that dairy free is not an option. I'm here to tell you that's wrong! Not only have we come up with an over-the-top, creamy, dreamy dairy free cheesecake, it's also gluten-free, paleo friendly, and requires no baking! Still not convinced? You will be once you taste it! Grab your food processor, it's time to make some Berry Cheesecake Bites!

Ingredients (Crust):
1 cup Honeyville Blanched Almond Flour
1/4 cup Dates (pitted)
1/4 tsp Salt
1 Tbsp Coconut Oil

(Filling):
1/2 cup Honeyville Freeze Dried Blackberries
1/2 cup Honeyville Freeze Dried Strawberries
1 cup Cashews
3 Tbsp Raw Honey
1 Lemon, juiced
1 tsp Vanilla
4 Tbsp Coconut Oil

Directions:
First, prepare your crust.

Chopped Dates











Chop up 1/4 cup dates into smaller pieces.

In your BOSCH Food Processor attachment, add dates, almond flour, salt, and coconut oil.

Crust Blending











Process until mixture turns into a soft batter.

Crust Dough in Muffin Cup











In silicone muffin tray, shape dough balls into the cups, giving you your crust-like bottom.

Repeat this process in each cup. This recipe should give you 6 bites total.

After making your crust, prepare your filling.

Re-hydrated fruit











First, combine blackberries and strawberries and re-hydrate by soaking in water until soft, then drain excess water.

Blended Mix











In a large blender, add fruit, cashews, honey, lemon juice, vanilla, and coconut oil, and blend until your get a smooth mixture.

Scoop mixture on top of crust, and place in the freezer for no less than one hour.

Once solidified, remove bites and serve.

Sorry to tell you that any recipe that has Honey as an ingredient is NOT vegan.

This may be vegetarian, but it is not Vegan unless you substitute the honey with a truly Vegan alternative sweetener.

Thanks Randy for the clarification. You can easily make this recipe truly Vegan by substituting our Agave Nectar for the Honey. That way, you can keep the sweetness!

Brown rice syrup would be a great substitute for honey.
