Strawberry Shortcake Biscuits Recipe
















Is there anything more "Summer" than Strawberry Shortcake? The sweet, sugary delight of freshly sliced strawberries, creamy whipped cream, all atop a warm, moist cake just screams hot days, cool nights, and dips in the neighborhood pool!

No matter what our age, it's hard to turn down a serving of strawberry shortcake. For those of us that love baking, it's even harder to pass by any unique, awesome strawberry shortcake recipe that comes our way. That's why when I found this particular one, I knew I couldn't let it go! Made with our awesome Freeze Dried Strawberries, topped with our impressive Insta-Whip, and served between a warm, buttery biscuit, this may just be the best strawberry shortcake recipe you'll ever find. Let's kick off summer right with this Strawberry Shortcake Biscuits Recipe!

Ingredients (Biscuit):
2 1/2 Tbsp Honeyville Buttermilk Powder + 1 cup Water
1 1/2 sticks cold Butter, cut into small pieces
2 1/2 cups Honeyville Alta Artisan Bread Flour
2 Tbsp Sugar
1 Tbsp Baking Powder
1 tsp Salt
2 Eggs

(Strawberry Filling):
4 cups Honeyville Freeze Dried Strawberries
2 cups Strawberry Soda
1 cup Sugar
6 Tbsp Ultra Gel

(Whipped Topping):
1 cup Honeyville Insta-Whip
1 cup cold Water

Directions:
Preheat oven to 375 degrees.

Re-constitute Buttermilk Powder, then add eggs and whisk together.












In a large bowl, combine flour, sugar, baking powder, and salt.












Add cubed butter, then mix together with a pastry blender until texture is crumbly.












Pour egg/buttermilk mixture into flour/butter ingredients and mix together until a soft dough forms. Turn dough out on a floured surface and roll out to about 1/4 inch thick. Using a biscuit or cookie cutter, cut out biscuit shapes.












Place on a baking sheet and bake in the oven at 375 degrees for 30 minutes, or until tops are golden brown.












Remove, and allow to cool.












While biscuits are cooling, make your strawberry filling by combining strawberries, soda, sugar, and ultra gel, in a large bowl and mixing until strawberries are soft.

Make your topping by combining insta-whip and water and mixing with an electric hand mixer until soft peaks begin to form. Slice biscuits in half, place strawberry filling and whipped topping on biscuit, then serve.












These biscuits are the perfect combination of sweet and savory. The strawberry filling is the perfect amount of delicious sweet flavor, while the biscuit keeps that sweetness in check. The insta-whip topping cools the whole thing down and is the perfect topping for this one of a kind dessert!
