Chia Quinoa Bread Recipe
















Quick, name an ingredient that can boost energy, strengthen muscles, help hydration and endurance, and provide protein to help build muscle! It has to be an ingredient that you can add to both foods and drinks without changing the taste, and, oh yeah, it has to be both a Superfood and an Ancient Grain. No, we're not talking about some new, genetically altered, futuristic food.












Say hello to the Chia seed. Don't let the small size fool you, these seeds are packed full of healthy goodness! Named from the ancient Mayan word for "Strength" chia seeds are an excellent source of energy and protein. These seeds have been used by long distance runners and athletes for years, thanks to their ability to extend endurance and hydration, as well as being a great source of fiber. Even better, they can be baked or cooked in about anything and quickly dissolve in water, making them natures energy drink! Consider these seeds the Swiss Army knife of Superfoods. They do everything!

Today, we decided to combine our chia seeds with another organic product we carry, quinoa. Using our milled Hard White Wheat, Alta Artisan Flour, and Hulled Millet, we've created a super healthy, energy infused bread that not only tastes great, but will give you the endurance you need to get through the day, one slice at a time. It's time to get an energy boost! It's time for Chia Quinoa Bread!

Ingredients:
3 cups Hot Water
3 Eggs
1/4 cup Olive Oil
1/3 cup Agave Nectar
4 cups Milled Honeyville Hard White Wheat
1 cup Honeyville Hulled Millet
1 cup Honeyville Organic Quinoa
1/2 cup Raw Organic Chia Seeds
1 Tbsp Salt
4 Tbsp SAF Yeast
6-8 cups Honeyville Alta Artisan Bread Flour

Directions:
Preheat Oven to 400 degrees.












Using your Komo Classic Grain Mill, mill 4 cups of Hard White Wheat Flour. Any grain mill will do, but I love the Komo. It uses milling stones to create a super fine flour every time. It'll last a lifetime, and it looks awesome on your kitchen counter!












In your BOSCH Universal Mixer, combine the following ingredients in this order: Water, eggs, oil, agave nectar, milled hard white wheat, millet, quinoa, chia seeds, salt, and yeast. Turn mixer to #2 setting and let ingredients mix completely. While mixer is still running, slowly add Alta Artisan Flour 1 cup at a time until dough begins to pull away from the sides. Knead in machine for 2-3 additional minutes, then turn off and remove.












Place dough on an oiled hard surface.












Divide dough into 3 balls, then pound down each ball, removing any excess air, and shape into a loaf.












Place each loaf in a greased bread pan and allow to raise for an additional 20-30 minutes. Cut slices in the top with a knife, then place in 400 degree oven, knock temperature down to 350 degrees, and bake for 30-35 minutes.












Remove and allow to cool on a wire rack. Slice and serve.

The quinoa bakes up white, fluffy, and full of flavor.
