Almond Flour Chocolate Chip Cream Filled Cookie Sandwich
















You really can't beat a good cookie, don't you agree? No matter what's going on in life, those delicious, fresh-baked delights always seem to lift our spirits and brighten our days. Cookies are food for the soul, and always seem to make life a little better, one bite at a time.

For me, nothing beats the taste, texture, and overall feelings that come from a fresh baked chocolate chip cookie. They're our tried and true, back-to-basics cookie that we always pull out of the recipe book whenever we need that cookie pick-me-up. Now, imagine taking that traditional, family-tested snack and transforming it into an incredible, decadent delight that not only excites your palate, but your whole being as well! We did just that. Taking our highly popular Blanched Almond Flour Chocolate Chip Cookie recipe and adding a delicious, vanilla whipped cream, we've created the perfect cookie sandwich that will keep you begging for more. Best of all, the whole thing is gluten-free! You know you can't beat that!

Ingredients:
2 cups Honeyville Blanched Almond Flour
1/4 cup Butter, softened
1/4 cup Sugar
1/4 cup Brown Sugar
1 Egg
1/4 tsp Salt
1/2 tsp Vanilla
1/4 tsp Baking Soda
1/2 cup Cacao Chocolate Chips

Filling:
1 cup Heavy Whipped Cream
2 1/2 cups Powdered Sugar
1 tsp Vanilla

Directions:
Preheat oven to 375 degrees.












Mix softened butter, sugar, brown sugar, and egg together until smooth. Add vanilla, salt, baking soda, and almond flour and mix until all ingredients are incorporated. Add chocolate chips.












Using a spoon, make balls of dough and place on a greased baking sheet.












Bake at 375 degrees for 12-15 minutes. Remove and allow to cool.

While cookies are cooling, make your whipped filling by adding all ingredients in a bowl and mixing with an electric hand mixer until soft peaks begin to form. Frost back of cookies and make sandwiches, then serve.












These cookies are packed full of all the delicious flavors you're hoping for. The creamy vanilla whipped cream is the perfect filling for this sweet and scrumptious sandwich. The texture of these beauties are perfect, soft and chewy, with all the sweet aroma and taste we love in chocolate chip cookies. And did I mention they're gluten-free? Yeah, you're going to want seconds!

I made these twice now with a slight modification and they have turned out great! I've been looking for a cookie recipe that doesn't taste like sawdust and these don't. My husband and kids are pretty picky. We've recently been going wheat free/grain free and the transition has been difficult at times. The variation I made was to use all coconut sugar in place of the white and brown sugar and baked these at 350 for 10-11 min instead of 375 for 12-15 min, using a small cookie scoop. They burned at 375. Highly recommend this recipe if you are looking for a good choc chip cookie!
