Almond Flour Peach Scones Recipe
















What's your favorite baked treat for summer? I know, Summer and baked goods go together about as well as sunny skies and rain coats. We just don't think of baking sweet, delicious treats during the summertime. 

If there was one ultimate summer treat, what would it be? Sweet and delicious? That's definitely a must. It would have to be healthy. This is bikini season, after all, and calorie busting desserts just don't cut it! Perhaps something made with a delicious fruit that reminds us of everything we love about summer? And, of course, we'd want it paleo and gluten-free. Now that's the kind of baked delight perfect for flip flops, beach towels, and sunny summer days! Guess what, we've found that perfect recipe already! After checking out this delicious creation from Civilized Caveman Cooking, we knew we had to bake up our own, with the perfect summertime twist...peaches! Let's ring in summer wit these Almond Flour Peach Scones!

Ingredients:
1 Tbsp Cinnamon
2 Eggs
4 Tbsp Raw Honey
Pinch of Salt

Directions:
Preheat oven to 375 degrees.












Re-hydrate your peaches by adding just a touch of water, stirring until softened, then draining any excess liquid.












In a large bowl, combine almond flour, coconut flour, cinnamon, baking soda, salt, and peaches, and stir together.












In a medium bowl whisk together eggs and honey.












Add wet ingredients to dry ingredients and mix together until a soft dough forms.












On a parchment paper-lined cookie sheet, shape the dough into a small circle, about 1 inch thick.












Using a pizza cutter, slice circle into 4-8 scones, depending on how large you want them.












Bake at 375 degrees for 10-12 minutes, or until scones are lightly golden brown. Top with more re-hydrated peaches and dust with cinnamon, then serve.
