Almond Flour Peanut Butter Banana Cookie Bars Recipe



I love cookie bars, don't you? Whatever chef came up with the idea to bake a delicious cookie in a baking pan should get an award! I mean, how cool are cookie bars?! It's everything you want in a cookie, baked up in a pan, and cut up into the perfect hand-held snack. Genius!

Today's recipe takes your dreams of cookie bars and transforms them into reality. Getting our inspiration from simplylivinghealthy.org and using our highly popular Blanched Almond Flour, we've come up with a delicious, gluten free cookie bar that's packed to the brim with flavor! Get your taste buds ready, it's time for some Peanut Butter Banana Cookie Bars!

Ingredients:
Crust:
1/2 tsp Salt
1/4 cup Coconut Oil, melted
1 Tbsp Vanilla

Filling:
2 cups Honeyville Powdered Peanut Butter + 3/4 cup Water

Topping:
1/4 tsp Salt
1/2 tsp Cinnamon
1/4 cup Coconut Oil, melted
2 Tbsp Agave Nectar
1 cup Sliced Almonds

Directions:
Preheat oven to 350 degrees.












In a large bowl, mix together crust ingredients until a crumbly batter begins to form.












Using a greased 9x13 baking dish, press dough into the dish until completely covered. Bake at 350 degrees for 12-15 minutes, or until top is lightly golden.












While crust is baking, re-hydrate your peanut butter.












Also, re-hydrate your bananas by lightly sprinkling with water. You want them moist, but not soggy.












In a separate bowl, mix together topping ingredients until a crumbly topping forms.












Once crust is finished baking, remove and spread peanut butter over the top while still warm.












Spread re-hydrated bananas over the top of the peanut butter.












Top the whole thing with your crumbly topping.












Bake in the oven at 350 degrees for 20-25 minutes, or until top is golden brown. Remove and allow to cool for 1 hour before slicing and serving.












These cookie bars are packed full of flavor and texture! The rich taste of almonds rings through the entire cookie. The creamy texture of peanut butter, along with the smooth taste of the baked bananas brings this entire treat together in the perfect way possible. Serve this up as a great after-school snack, or pop them in the freezer for a delicious late night treat!
