Jalapeno Cheese Cornbread Recipe
















Some things are just better spicy, don't you agree? Perhaps that's why some of us put Tabasco on our scrambled eggs or hot sauce on our pizza. Sometimes you've just got to turn up the heat in life!

If you're one of those people that constantly finds themselves saying, "This is good, it just needs to be a bit more spicy," then today's post is for you! We took our already proven and potent Freeze Dried Jalapenos and combined them with the zip of our Freeze Dried Monterey Jack cheese to give you the most devilishly delicious twist on a tried and true Southern favorite...Cornbread! Yes, you heard me right, we've spiced up Cornbread! Grab the largest glass of water you have, it's time for Jalapeno Cheese Cornbread.

Ingredients:
1 cup Honeyville Yellow Corn Meal
1/2 cup Honeyville All Purpose Flour
1 tsp Baking Powder
3/4 tsp Sugar
1/2 tsp Baking Soda
1 1/4 tsp Salt
2 1/2 Tbsp Honeyville Buttermilk Powder + 1 cup Water
2 Eggs
3 Tbsp Butter, melted
1 cup Honeyville Freeze Dried Monterey Jack Cheese
1 cup Honeyville Freeze Dried Corn
1/2 cup Honeyville Freeze Dried Jalapenos

Directions:
Preheat oven to 400 degrees.


In a large mixing bowl, combine cornmeal, flour, baking powder, sugar, baking soda, and salt.


Re-constitute your buttermilk powder and add melted butter and eggs, then whisk together. Add to dry ingredients and mix until batter begins to form.


Now, it's time to add your freeze dried ingredients. The best part of this recipe you ask? You don't have to reconstitute them before you add them!


Add cheese, corn, and jalapenos to batter. Mix together until completely combined.


Take an 8x8 baking pan and grease well with butter.


Pour batter into pan and bake at 400 degrees for 30 minutes, or until a toothpick comes out cleanly.


Remove, allow to cool on a wire rack, then slice and serve.

Our Jalapenos are really rip-snortin' hot. I personally can only do about a Tablespoon without hurting myself with this recipe. Just saying. If your family is sensitive to hot stuff, I'd tone down the amount of jalapeno a lot. :)
