Pressure Cooker Cashew Chicken Recipe
















Quick and easy! That seems to be the new meal trend these days. Fading away are the slow cooked, time consuming recipes we grew up loving. I often wonder what my Grandma would think of TV dinners, microwavable popcorn, and hot pockets!

But in this age of ready-in-seconds meals and drive thru windows, one thing we've rushed passed is flavor, aroma, taste, and simple goodness! I our hustle and bustle to get through life quick, sometimes we need to take the time to enjoy everything good about food! We don't have to sacrifice flavor for time, and today's recipe is the perfect example of that. Packed full of flavor, this Cashew Chicken will melt your soul, warm your taste buds, and yes, even save you time. How you ask? Because the whole thing takes only 12 minutes to cook in your Fagor 3 in 1 Pressure Cooker! Too good to be true? Check out our recipe and see for yourself!

Ingredients:
2 cups Honeyville Freeze Dried Chicken
1 cup Honeyville All Purpose Flour
1 Tbsp Black Pepper
1 Tbsp Olive Oil
1/4 cup Soy Sauce
2 Tbsp Balsamic Vinegar
2 Tbsp Ketchup
1 Tbsp Brown Sugar
1 garlic clove, minced
1/2 tsp Ground Ginger
1/2 cup Cashews
1 lb Rice Noodles
2-3 cups Water

Directions:
Before we get started, we need to prepare our chicken.


First, re-hydrating your chick by soaking it in water until moist, then draining the excess water.


In a large bowl, combine flour and black pepper.


Lightly coat chicken with flour/pepper combination. Get your Fagor Pressure Cooker ready by turning the pressure setting on High to 12 minutes, then lining your pressure cooker bowl with the olive oil. Place the chicken in the cooker, lid off, and lightly brown each side for 2 minutes.


In a separate mixing bowl, add soy sauce, vinegar, ketchup, brown sugar, garlic, and ginger and mix together.


Add sauce mix, noodles, cashews and water to pressure cooker, lock lid on, and allow to cook for 12 minutes.

Release pressure and serve.


This meal has all the time convenience you've come to expect in a quick meal with all the flavor you love of a slow cooked meal. The breaded chicken bakes up delicious and the sauce is simple to die for! If you like your chicken on the spicy side, feel free to add 1/2 tsp of red pepper flakes.


In our fast-paced life, some things are worth slowing down for. Thankfully, with our cashew chicken recipe, the only slowing you'll be doing is the savor the amazing taste!

Do you have to use the pressure cooker you state in your recipes? We have an electric on that works extremely well, (canning, beans, chicken). Don't want to buy one just for the freeze dried recipes.

The Fagor is definitely the one we'd suggest using, but the recipe should work with any electric pressure cooker. Thanks for the question!
