Raspberry Strudel Recipe
















I love Holiday sweets, don't you? To me, the first sign of the Holidays aren't the sounds of carols playing or department store sales occurring. For me, the Holidays have officially begun when your nose catches the sweet aroma of delicious treats baking in the kitchen!

One such treat that I remember growing up was Raspberry Strudel! Every year, some time between Thanksgiving and Christmas, my family always got a warm and delicious visit from a close family friend and member of our church. What made this visit so special you ask? He always came bearing his amazing, home-made Raspberry Strudel! It became so common and something that we looked forward to so much that soon these sweet arrivals were just another Holiday tradition our family loved.

While I don't pretend to have the same strudel-baking skills that he has, I thought it only proper to kick off the Holidays a bit early here at Honeyville with our own version of Raspberry Strudel. The best part of this recipe is that it features our highly versatile Scone Mix, or as I call it, our "all purpose dough mix in disguise!" You've already seen us create such treats as Homemade Calzones and Apple Pie Pockets using this mix. Now watch how you can transform this unassuming scone mix into a delicious Raspberry Strudel, just in time for the Holidays!

Ingredients:
3 cups Honeyville Gourmet Scone Mix
1 cup Warm Water
2 1/2 tsp SAF Yeast
2 cups Honeyville Freeze Dried Raspberries
3 Tbsp Sugar
2 tsp Ultra Gel
4 Tbsp (1/2 stick) Butter, melted
1 Tbsp Sugar

Glaze:
1 cup Powdered Sugar
1 tsp Vanilla
3 Tbsp Heavy Cream

Directions:
In a large bowl, combine water and yeast and let activate for 5-8 minutes.


Add scone mix and knead for 5-10 minutes until a soft dough begins to form. Cover and let rise for 20 minutes.


While dough is rising, re-hydrate your raspberries by soaking in water in a large bowl, then draining the excess water.


Add 3 Tbsp sugar, 2 tsp Ultra Gel.


Mix until completely combined. This will be the filling of your strudel.


Once dough has risen, remove from bowl and roll out on a hard surface into a rectangle shape.


With a dough cutter, slice wings into the sides of the dough. Make sure you have the same number of wings on each side.


Spread filling evenly on top of dough.


Begin to weave your wings to make the strudel.


Your strudel should look similar to a braided bread. Once this is done, preheat oven to 350 degrees.


Brush melted butter on top of your strudel.


Lightly sprinkle with 1 Tbsp sugar. This will give an extra sweet taste when baked.

Place in oven and bake at 350 degrees for 30-35 minutes, or until top is lightly brown.


Remove from oven and begin to make your glaze.

In a medium bowl, mix powdered sugar, heavy cream, and vanilla together until a creamy glaze forms.


Place glaze in a resealable sandwich bag, cut the side with scissors, and pipe glaze on to strudel.


Slice up and serve.


This strudel has all the sweet taste and aroma you love in a Holiday treat. The raspberry filling is the perfect amount of sweet and tart and gets you in that holly, festive mood. The smooth glaze adds just the right amount of sweetness, while the dough mix bakes up light and fluffy and is the perfect container of this sweet and savory spectacle! If you're not singing Holiday carols yet, you will be once you bite into this tasty treat!
