Holiday Grain Salad Recipe


Don't you just love the Holidays? The cool weather, family get-together's, and, of course, the delicious food! Nothing gets us in the Holiday mood more than a fresh cooked Turkey, Honey Glazed Ham, and all those delicious side dishes! That might be why many of us pack on a few pounds here and there every Holiday season.

What if I told you that you could have the perfect Holiday side dish for Thanksgiving and Christmas, that was both delicious and healthy for you? How is is possible you ask? As Chef Brad always says, it's all about the grain, and he's back with an all new video showing you how to create a delicious, grain-filled dish, just in time for the Holiday season! Ingredients:
2 cups Honeyville Oat Groats
2 cups Honeyville Whole Grain Rye
7 cups Water
1 tsp Salt
3 cups Honeyville Freeze Dried Pineapple
1 cup Almonds
2 cups Honeyville Freeze Dried Strawberries
3 cups Honeyville Freeze Dried Grapes

Dressing:
1/3 cup Agave Nectar
1/3 cup Crushed Meyer Lemon Olive Oil
1/3 cup Peach Balsamic Vinegar
1 tsp Salt
1 cup Danish Blue Cheese

Directions:
Place oat groats, rye, water, and salt in your Fagor Pressure Cooker, place on lid, and set cooker for 14 minutes.

Once grain is finished cooking, release pressure, remove pressure cooking bowl, and place in refrigerator to cool.

Place grains in a large bowl and combine with re-hydrated pineapple, strawberries, grapes and almonds. Mix together.

Mix dressing ingredients in a separate bowl and pour over grain salad. Mix and serve.
