Raspberry Peach Cobbler Recipe

















My hometown celebrates the Peach this weekend.  No really, there is a whole weekend dedicated to this marvelously delicious fruit.  There are not one but TWO parades, a carnival, tons of vendor/local artisan booths, a car show, and I am sure I am missing something.  It is awesome!  Peaches are my favorite fruit so I am all for a weekend to celebrate it!  You'll find a variety of peach food items at this fair: peach cobbler, barbecue peach sandwiches, peach ice cream, peach fritters, peach shakes, and I am sure somewhere there is probably a battered and deep fried peach to be found.  I decided that since I didn't grab a bowl of celebratory cobbler this year the next best thing was to make a dish of it at home!

Ingredients:
2 and 1/2 cups Honeyville Freeze Dried Peaches
3/4 cups Honeyville Freeze Dried Raspberries
1 cup plus 2 Tbs Water
3 cups Honeyville Yellow White Cake Mix
12 oz. Lemon Lime Flavored Soda Pop (aka Sprite™)
Vanilla Ice Cream or Honeyville Insta-Whip for serving

Directions:
In a glass 9x13 pan add the peaches, raspberries, and water.  Lightly stir with a fork to make sure every bit of fruit has a chance to get into the water.  Let fruit sit for about 2 minutes to fully hydrate. 


Next add the cake mix on top of the fruit.


Pour the soda pop over everything.


Mix everything completely (I used the same fork from the first step.  Less dishes = happier me!)


Bake this beauty in a preheated 350 degree oven for about 25-28 minutes.  It'll be done when it passes the toothpick test.  (Insert a toothpick into the center and if it comes out clean you are good to go!)  Serve with a scoop of vanilla ice cream or a dollop of Honeyville Insta-Whip and enjoy every bite!


I like my cobblers more cakey than not, so this recipe is perfect for me as it does have a good amount of cake.  I like that the peaches are still the star of the show but the raspberries add just a touch of tartness so it isn't sock-it-to-you sweet.  I wish I could have had a picture of my family and I trying to get the finished pictures.  EVERYONE was crowding around hoping they were going to get some cobbler.  They knew just from the smell that this recipe was a winner!  I kept having to remind them to stand back or their hands/feet/shadows were part of the picture.  Hey good food waits for no one...or picture!

So how do you prefer your cobblers--with ice cream or dollop or Honeyville Insta-Whip?  And let's settle this once and for all:  do you say "Soda" or "Pop" or "Soda Pop"?
