Teacher Tuesday: Taco Sundaes with Karen Sunderland















Welcome to our July edition of our Teacher Tuesday posts, where we showcase, each month, one of the impressive and amazing instructors that teach each month at our local Honeyville Farms stores. Today we're excited to introduce you to one of our great instructors, Karen Sunderland. Karen teaches monthly classes at our Salt Lake City, UT store. Karen teaches a wide variety of classes, with a focus specifically on meals that bring families together. Karen has always felt that meal time is a great opportunity to bring the whole family together, and her classes are full of tips and suggestions on how to get the family more involved and excited about dinner time! Today, Karen will introduce us to a delicious and exciting recipe that the whole family will enjoy, Taco Sundaes!

Hi Honeyville Fans! I'm Karen Sunderland, a teacher at the Honeyville Farms Salt Lake City, UT store. I love showing people how to get their grains and beans out of buckets or cans, an on to the table in creative, tasty meals!

I feel that daily family mealtime is very important in keeping families close. In my classes, I explain how to involve the family in meal prep and enjoying that time together. One of my favorite classes to teach is "Grandma's Healthy Junk Food," with my grandchildren as helpers.

The recipe I share with you today is one of our family favorites, Taco Sundaes! It is from our newest cookbook, "Feasting on Food Storage," available December 2013 at Honeyville Farms stores. This is a gluten free recipe the whole family will love.

Taco Sundaes


Ingredients:
1 14 oz can Chili with Beans
1 14 oz can Honeyville Pinto Beans
3 cups Honeyville Long Grain Rice
1 3/4 cup Honeyville Freeze Dried Corn (Re-hydrated)
1 cup Shredded Cheese
3-4 cups Shredded Lettuce
1-2 cups Diced Tomatoes
1 cup Chopped Olives
Salsa
Crushed Tortilla Chips
Ranch Salad Dressing

Yieds: 4-5 servings

Directions:

Mix chili and beans until hot and bubbly. Layer your own Sundae as follows: Rice, chili, corn, cheese, lettuce, tomatoes, olives, salsa, salad dressing. Top Sundae with crushed tortilla chips. Enjoy!
