Popcorn Cookies Recipe

















I am a sucker for a snack, especially of the cookie variety!  After a very busy week I needed a movie and treat kind of night and tried this new recipe.  The popcorn in place of your typical oatmeal was a fun twist.  It added a little crunch and subtle new flavor.  Try this recipe for your next game night, movie night, or just because!

Ingredients:
1 and 3/4 cups Honeyville Bakers or Honeyville All Purpose Flour
3/4 cup Honeyville Hard White Wheat Flour (grind your own-I had leftovers from my last batch of bread)
3 Tbsp Honeyville Powdered Whole Egg
1 tsp Baking Soda
1/2 tsp Salt
1 cup Butter, softened
1 cup Brown Sugar
1/2 cup Granulated Sugar
6 Tbsp Water
1 Tbsp Vanilla
1 and 1/2 cups Chocolate Covered Raisins
3 cups popped and lightly salted Honeyville Yellow Popcorn (remember this quick tutorial on making microwavable popcorn)

Directions:
In a bowl mix together both flours, egg powder, baking soda, and salt.


In a separate, large bowl cream the butter until fluffy.


Add in both sugars and blend until smooth.


Add the vanilla to the water and thoroughly mix into the dough.


Working in batches, add in the flour.  Mix in completely after each addition.  Next mix in by hand the chocolate covered raisins and popcorn.


Take approximately 2 Tbsp of dough and shape into a ball.  Place each dough ball on a baking mat covered sheet.  Because of the size of cookie only 9 will fit on a tray (be sure to stagger the rows). 


Bake in a 350 degree preheated oven for approximately 12 minutes or until the the edges begin to turn golden brown.


Transfer to a cooling rack.  Grab a plate and get a book, start a movie, or play a game and eat these yummy cookies!
