Coconut Flour Chocolate Chip Cookies Recipe

For all you Coconut Flour and Coconut Oil Lovers-I've got a yummy recipe for you! How about some Chocolate Chip cookies?  A perfect dessert for after a nice warm dinner and you are sitting there wondering what you want to cure your "sweet craving" with! Bake up a batch of these cookies and you will know exactly what you want.

1/4 cup Butter
1/4 cup Coconut Oil
1/2 cup Sugar 
1/2 Tbls. Vanilla
1/8 tsp. Salt
1/2 cup Honeyville Powdered Whole Eggs+ 1 cup water
1/2 cup Coconut (can also be purchased at Local Honeyville Store)
Chocolate Chips (desired amount)

Pre-heat oven to 375 degrees

Mix together butter, oil, sugar, vanilla, salt, egg and water

Add flour and coconut and mix well

Grease a cookie sheet, roll into balls, and then slightly push down (they won't spread during baking). Bake 10-13 minutes allowing it to turn slightly brown

Hey Guys,
Recently I was diagnosed with celiac disease so I am fairly knew to gluten and grain free baking:) Its awsome sometimes where life takes you! I found your site through the urban poser blog but I was wondering with some of like your powdered eggs what is the equivalency with regular eggs or for example I know coconut flour is delicate with moisture contents if I use honey vs sugar I know to lower the bake temp and duration bc of water content but how does this effect....just picking your brain..

Hi Carolyn!

Glad you love the recipe! If you are using fresh eggs, the recipe would call for 4 eggs. 2 Tbsp of powdered eggs equals 1 reconstituted egg. Thanks for the question!
