Vegetarian Burrito Bowl Recipe

If any of you are like me, at about 2 p.m. today, the massive sugar crash of Halloween will hit hard and by 3 p.m. you'll be left in a daze, wondering why the thought of downing 25-30 of those snack-sized candybars ever sounded like a good breakfast!

While the pains in our stomach are still churning and the stains of melted chocolate are still on our fingers, I thought that if there was ever a day to post a nice, healthy meal using some of our great Honeyville products, that day was today. Though this is listed as a Vegetarian Meal, you can easily add beef, chicken, pork, turkey, or any other meat that your soul delights in. So, without further adieu, I give you Vegetarian Burrito Bowl.


Ingredients:
1 Cup Honeyville Long Grain White Rice
2 Cups Honeyville Refried Bean Flakes
1 Cup Honeyville Freeze Dried Broccoli
1 Cup Honeyville Freeze Dried Corn
1/2 Cup Honeyville Freeze Dried Mozzarella Cheese
4 Tortilla Bowls

Directions:
In a seperate bowl, reydrate the Mozzarella Cheese. We've found that even a few sprayers with a water bottle can be just enough to soften it up. Throw rice on a hot skillet until lightly brown. Then add 2 cups water and set to medium heat. Let boil, then wait 1 minute and then reduce heat to low and cover.


Now here is the fun part. Once the rice is almost ready, add Broccoli and Corn into rice with 1/2cup of water and cover. Stir occasionally. This allows your vegetables to rehydrate while the rice is finishing. Add a little salt and pepper to taste.


Now you can start the beans. I love these because they cook up super quick and have the exact taste and texture of refried beans. Add bean flakes to warm pot and add 2 cups water. Stir occasionally until beans are nice and hot and have a thick consistency.


Spread beans into Tortilla bowls, then add rice, broccoli, and corn mix. Reydrate Freeze Dried Mozzarella Cheese and sprinkle on top of each bowl. The heat from the rice and beans will melt the cheese.


This is a delicious and healthy meal and even better, you can add just about anything your heart desires, whether that's more veggies or some meat. You could even throw in your favorite hot sauce to add a little more flavor and spice! The choices are yours, and after reaching your sugar high for the year, isn't it nice to come back down with a healthy and delicious meal?
