Shepherd's Pie Recipe



If you like meat and potatoes you'll like Shepherd's Pie.  If you like meals that come together quickly you'll like Shepherd's Pie.  If you like sneaking veggies into meals so that your family will eat more of them you'll like Shepherd's Pie.  Seriously guys, does anyone really need any convincing trying this recipe out?

Ingredients:
3/4 tsp. Salt, divided
1/2 tsp. Pepper, divided
4 cups Water
1 (10.75 oz) Condensed Tomato Soup

Directions:
First rehydrate ground beef, onions and green beans all together (The simplified instructions: bring some water to a boil, add meat and veggies, stir, cover and take off heat.  Let sit about 5 minutes until soft.  Drain well.)  In a separate bowl rehydrate the cheese.  Drain well.  Prepare the potatoes by boiling the 4 cups water, add 1/2 tsp. salt, 1/4 tsp. pepper, potato flakes, and sour cream powder.  Remove from heat and whisk for 2 minutes until thick and smooth. 
 
In a 8x8 baking dish combine beef and veggie mixture with remaining salt and pepper and tomato soup.  Evenly spread out and smooth the top.  Top with mashed potatoes.  Smooth top.  Sprinkle cheese on top.  Bake in a 350 degree preheated oven for 15-20 minutes until bubbly and cheese melts.  Let it sit about 5 minutes before serving (like you would with a lasagna).

I wanted to add a little flavor to my potatoes so I added the sour cream powder.  I am sure you could add butter if that is more your taste preference.  If you like a thicker mashed potato add more potato flakes.  We really liked this dish.  It smelled wonderful as it was cooking and it made me think of home.  The green beans taste so garden fresh and don't squeak against my teeth like regular canned green beans do.  (Tell me I am not the only one who notices this!)  You could definitely add a variety of veggies in here too.  I think Honeyville Freeze Dried Peas or Dehydrated Carrots would be great additions.  Next time I'll have to add those.
