Pancake Muffins Recipe

A reader (thank you Joesph P.) send us an e-mail with a great idea using Honeyville Pancake mix. He said that one morning he needed a new idea and took our Pancake mix, added some eggs, and fruit preserves, raw cane sugar and made some yummy muffins! So I took this idea and tried it one morning and as Joesph said, they were fast, easy, and yummy! So here is the recipe that I tried:


1/4 cup Honeyville Powdered Eggs + 1/2 cup water (or 2 eggs)
2 cups Water
1/2 cup Sugar
Freeze Dried Fruit of your choice (I used Strawberries becuase my kiddos LOVE them!)
Powdered Sugar

Mix pancake mix, powdered eggs, water, and sugar together. Add Freeze Dried Fruit. Put batter into greased muffin tin and sprinkle with powdered sugar.

Bake at 400 degress for about 18 mins (my oven ALWAYS seems to cook faster, may need to adjust cooking time)


And there you have it! An easy muffin recipe. Now you can grab your muffin as you are running out the door in the morning and eat on the go!

Is the fruit reconstituted or is there enough liquid in the batter for it to be added dry?

Oh I love the pancake mix! It's awesome for muffins and scones and cobblers and cookies! We use it all the time! The new multigrain pancake mix is awesome for this too!! Great post guys!!
